Happy Children's Day!!

Boy, it has been ages since I last celebrated Children's Day. Children are the most innocent and pure. And once in awhile they will say the darn-est thing. Just recently, I asked my 5yr old niece to count to 1 to 20, she literally says " 1, 2 , 20"...OMG, she is soooo funny, everyone around who heard just burst into laughter. If only I was so witty at her age.

Vanilla French Meringue

Hey, look!!! I have made pastel colored clouds. I am a happy baker!


















This week I have made french meringue as requested. French Meringue is a delicate desert with a light texture and a melt in the mouth feel. As I am whipping the egg whites, it slowly forms into an airy white mass, somehow or rather it reminds me of clouds. Soft, white and fluffy. So COOL!! Downside is, they took forever to bake. 2425625627hrs, not like I'm counting. And plenty of leftover egg yolks.

But DARN these "clouds" tasted GOOOOOOD!!

A cake with character

I have a request for a small cake with minimum cream, butter and sugar. The first thing that came into my mind is Durian swiss roll. Why swiss roll?? First, its not a simple cake to master. I have tried and tested many recipes to get it right. Second, this recipe I am using, does not requires any artificial addictives (i.e no baking powder or soda and etc) and requires minimum sugar and butter. Third, it does not requires slabs of whipped or butter cream to decorate, as it looks good as it is. But why "a cake with character"? Well, the filling needs an acquired tasted to appreciate it, and its 100% fresh durian pulp. Its either you love or hate it. In addition, the sweetness from the fruit enhance the cake naturally.

I have a love-hate relationship with durian, I hate the pungent stench when I'm not eating it. But simply love its creamy bittersweet flesh however it leaves a nasty aftertaste, plus anyone near you will know that you just had durian. The taste will linger in your mouth for hours.

Hand-made macarons boxes

Pretty things never fail to catch my eyes. I am amazed how Japanese pack their products, sooooo nice. Hence, now its my own handmade interpretation of packaging for my macarons.





I started with the box, the window, then the base and individual separator. It kept me busy for the whole day with multiple paper cuts all over my hands.

Project Mickey Mouse

Everyone grew up with Mickey. What is not to like about this animated mouse? One of my favourite cartoon is where he is whistling, driving the train and dancing to the tune. So classic!! 

I feel happy making him, maybe it is because he is from the " Happiest place on earth". I am glad to see how he turn out with my clumsy hands. I hope our birthday boy likes it as much as i do.

For this case, I have filled these pastries with Valrhona chocolate pastry cream, and decorated with almonds nibs, gold pearls,Valrhona crunchy balls and blue sugar sprinkles. This makes an excellent eye-catching center piece for any occasion.

Macarons

To me, making macarons is a very tedious and time consuming task. First, you have to painstakingly grind the almond. Then, sieve the almond meal, not once but twice. After that, is the macaronnage (folding-in) of the wet and dry ingredients. You got to be very precise, not too much mixing and not too little, as every little mistakes will affect these delicate cookies. Then piping the mixture in little circles and waiting for 2 hrs, for them to form a layer of skin . I will so totally pull out my hair if those tiny "pedi" didn't out or the macarons are out-of-shape.

pink: Coffee macaron with passionfruit white chocolate ganache

While the macarons are "cooling down", you can start with the filling. A variety of buttercream, ganache, caramel and etc. Oh, did I tell you that I make my own caramel? Yes, I'll be right in-front of the stove for about an hour, busy stirring the caramel to prevent it from burning. If you are not attentive, you will get burnt caramel. Well, burnt caramel is a flavour of filling too.
